Coffee Cake

Growing up, I have great memories of smelling my mom's coffee cake baking in the oven.  Especially on a cold day, the aroma would spread throughout the entire house.

This recipe is great because you can mix it all together and put it in the refrigerator overnight and bake it in the morning.  Perfect for the holidays coming up!

Cake
2 cups flour
1/2 cup sugar
1/2 cup brown sugar
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 cup buttermilk
1/2 cup butter (softened)
2 eggs

topping
1/2 cup brown sugar
1 tsp cinnamon

glaze
1 cup powdered sugar
1/2 tsp almond extract or vanilla extract
1-3 tsp milk (add one at a time until glaze consistency)

Combine all ingredients for cake in a large bowl.  Mix together for 2 minutes.  Pour into 9x13 pan.  Mix together brown sugar and cinnamon.  Sprinkle over top.  Bake at 350 degrees for 25-30 mins.  Drizzle glaze over top.  Enjoy!

I meant to get a picture to put on here, but my family dug into it too fast, so I wasn't able to.  The cake is super moist and delicious.

Since returning home, well if I must be completely honest, I've always had an issue with pride. I use my pride as an excuse not to do the things God calls me to do. The last position I held was in the preschool department of the church my family attends. I loved it! I loved the organization. I loved the children. I loved the teachers. Sure, like every job, there were some down sides, but mostly I loved it! When God called me away from it, I didn't want to obey. I was doing a good job. Why would He call me away from a job I was doing well? I was in His house, doing His work. Pride! That was my main problem. It wasn't the "I want attention" pride. Today

Today I am going to appreciate doing laundry for I am thankful my family has clothes to wear, towels to use after we take a shower, sheets for beds where we are able to rest, in our home that provides us shelter.  We are blessed to be clean.  We are blessed to be warm.  We are blessed to have a place to rest our heads. Today I am going to appreciate doing dishes for I am thankful that I have pots and pans to cook the food that we are blessed with and get to eat on plates and bowls with silverware.  We are blessed to have nourishment. Today I will enjoy the hundreds of times my children call out mom for I am thankful that I have been given the blessing of having these children, of teaching these children, of caring for these children.
