Banana Baking Day

Today I turned these....

Into this ....
(cinnamon swirl banana bread)

And this...
(Chocolate chocolate chip banana bread)

And these....
(Breakfast Cookies)

YUM!

I made Cinnamon Swirl Banana Bread, Chocolate Banana Bread and Breakfast Cookies.

When I make quick breads, they don't always turn out in my loaf pans. Usually they get really brown and the top/center is still doughy. I solve that problem by using either round or rectangle cake pans. If you use a round or rectangle, start checking the bread around 30 mins. It usually doesn't take 50-55 mins.

When I make multiple loaves of bread, I use foil pans so I can just pop them right into the freezer. I simply wait until they have cooled, cover them with plastic wrap and the lid that comes with the pans. I get round and rectangle pans 3 per package at the dollar store. It is also great because when I make multiple loaves, I usually give a pan or two away and the people I give it to don't have to think about getting the pan back to me.

Here is the recipe for Breakfast Cookies.  I honestly do not remember where I got it from. If you know where this recipe originated from, please let me know. I usually triple this recipe when I make it. Breakfast cookies are soft and remind me of the top of a muffin.

1/3 c butter, softened
1 c peanut butter
1 c brown sugar
2 bananas
2 t vanilla
2 eggs
1/3 c buttermilk
1/2 c white flour
1 1/2 c whole wheat flour
2 c quick cooking oats
1/2 c wheat germ
1 t salt
1 t cinnamon
2 t baking soda
1 cup chocolate chips

Beat butter, peanut butter, brown sugar, bananas, vanilla; add eggs and buttermilk. Mix flours, oats, wheat germ, salt, cinnamon, baking soda. Mix wet and dry ingredients; add chocolate chips. Drop spoonfuls on a cookie sheet.

350 for 13-18 min.

So I ended up making 6 pans of bread and about 7 dozen breakfast cookies.  I will freeze 4 pans of bread and 5 dozen breakfast cookies. The cookies freeze really well. I simply put them in a freezer bag and when the kids want one for snack, they pull one out and either let it thaw while they do schoolwork or they warm them in the microwave.

I love having quick breads and breakfast cookies handy for snacks.

Trying to be more of a planner

In December I started making a monthly meal plan.  I was excited, but a little nervous about how it would all turn out.  I must say I was pleasantly surprised at the outcome.  It didn't take as much time as I thought it would. I made the meal calendar for the month and then wrote down all the ingredients I would need.  That part was a little overwhelming at first.  I separated the lists into perishables and non-perishables/freezable.   Now I do a once a month shopping trip for the non-perishables/freezables and then a bi-weekly shopping trip for perishables.  I don't stick to the menu every day, but I know that I will have enough meals for a whole month.  When making out the menu I tried to put similar meals back to back.  Like one night we will have meatloaf and the next night we have shepherd pie.  I use the same ingredients 2 days in a row.  It saves time and money. A Mom Is A Mom

I've been struggling with something for a while now. My struggle has caused me to hide out in my house and not want to go out into the world. What is my struggle? Women treating other women in a negative matter. Women talking about other women in a negative matter. More to the point - I struggle with the way moms treat other moms. We moved down south from Michigan about 5 years ago. I was excited for the change. My excitement was quickly squashed with the negativity I received. Unfortunately, there are still some people down south who do not care for people from the north. This has been a struggle the entire time I have lived down here. I simply do not fit in. My feeling is that I don't care where you are from. If you are a woman, we have something in common and we should support each other and lift each other up.
